How to Make Chicken Jalfrezi
Chicken Jalfrezi is a notoriously spicy Indian curry dish. If you think you can handle it, here's how to make Chicken Jalfrezi:
Ingredients and supplies:
1 1/2 pounds boneless skinless chicken breast4 tablespoons vegetable oil or clarified butter2 teaspoons white cumin seeds4 garlic cloves3-inch piece of fresh ginger1 large Spanish onion2 green hot peppers1/2 green bell pepper2 tablespoons chopped fresh cilantro leaves3 fresh tomatoesSalt, to tasteLemon juice, to taste1 teaspoon paprika1/2 teaspoon turmeric2 teaspoons mild curry powder (use hotter powder for a spicier dish)Large skilletPrepare the ingredients. Finely chop the garlic cloves, ginger, and hot peppers. Peel and chop the onion, and seed and chop the bell pepper. Be careful slicing the peppers, because pepper juice can burn you. Wash your hands immediately after chopping them. Then chop the tomatoes. Finally, cut the raw chicken breasts into bite-size pieces.Cook the chicken. Heat the oil or butter over medium-high heat. Once hot, fry the cumin seeds for 1 minute. Add the chopped garlic cloves and fry for 1 minute longer. Now add the ginger, frying the mixture for another minute. Add the chicken pieces, and fry while stirring for 10 minutes. This should be long enough for the chicken to become opaque and nearly fully cooked.Cook the remaining vegetables. Remove the chicken pieces and set them aside; continuing to cook the vegetables with the chicken in the pan will lead to overcooked chicken. Add the remaining ingredients, except for cilantro and tomatoes, on medium-high heat. Fry for 5 minutes. Make sure the bell peppers have enough time to become soft.Finish the dish. When the vegetables are soft, add the cooked chicken back into the pan, along with the cilantro and tomatoes. Cook for about 5 minutes on medium heat. You may need to add a little water, but this sauce should be relatively dry. If you want a thinner sauce, add a little more water than usual. Test with a sharp knife to make sure that the chicken is fully cooked. There should be no pink left in the center. When the dish is done, then add salt to taste.Enjoy! Serve hot, with a squeeze of lemon juice on top. You can either place in a serving dish with a large serving spoon, or bring individual portions to the table. Serve with basmati rice or hot naan.
