Ice Cream Maker - Basics
An Ice Cream Maker is a small home machine used to make ice cream and frozen yogurts. It consists of a rotating special bowl that has a layer that holds rock salt that makes the cream to an ice cream mode. Other Types of Ice Cream makers include a bowl that can be frozen and does not requiere rock salt.

How do Ice Cream Makers Work
Once the Ice cream mix is ready, the mix has to be whipped and frozen simultaneously. Industrial Ice cream makers have a big blade that turns inside a tube which whips the mixture and intoduces air bubbles that give ice cream that soft structure. The whipping has to be continously to avoid ice crystals to be formed.
Home Ice cream makers have the same characteristics mentioned before on a smaller scale. Rock salt mixture is used for the freezing and the hand or electrical blade mixes and avoid the ice crystal formation.
Window of the Past
The history of Ice cream come from the Chinese, possibly around 200 BC, and the Romans. Many stories include Marco Polo returning from Asian trips with fruit-flavored ices, that way French royalty started to love it.
With the past of the years cream was added as an ingredient to the fruty ices and around the 1700s people started enjoying what we now know as Ice Cream.
The first Ice Cream maker was first introduced by the American Nancy Johnson in 1846.
Augustus Jackson, a confectioner from Philadelphia, created new recipes for making ice cream in 1832.
Jacob Fussel started the first wholesale ice cream manufacturing in 1851 when he had an excess of cream from his dairy business.
Alfred Cralle patented an ice cream mold and scooper used to serve in 1897.
Manufacturing methods, ingredients and technology pricing improved. In the 1920s Clarence Vogt produced the first continuous process freezer which opened up the possibility for commercial ice cream manufacture.
Ice Cream Makers Development
The invention of the wooden bucket freezer with rotary paddles improved ice cream's manufacture. Also the method of using iced mixed with salt to lower the temperature of ice cream ingredients was a big boost for Ice Cream.
The treat became both distributable and profitable with the introduction of mechanical refrigeration. The ice cream shop or soda fountain has since become an icon of American culture.
Different Types
There are two types of ice cream makers, hand-cranked and electric versions. Nowadays electric versions are the easier to use. There are 2 types of electric versions, both of them deliver the same excellent desserts.
The first, and most popular, uses a round metal bowl with a liquid freezing agent encased within. The bowl is frozen and then filled with the ice cream case base, a plastic dasher is quickly inserted, and the mixture is cranked. One drawback: you can only make one batch at a time, as the bowl must be refrozen after each use. Usually priced at around $40 to $60, popular brands include Krups and Cuisinart.
The second type operates as a self-contained unit, employing a compressor to freeze the ice creal. You pour the ice cream or sorbet base into the freezing compartment, turn on the machine, and off you go. Multiple portions are possible in only a few hours, with no refreezing necessary. Often the choice of professionals, this kind of convenience comes with a much heftier price tag--from $300 to $2,000 or more..
How to use an Ice Cream Maker
1. Fill ice cream can 3/4 full; mixture will expand.
2. Insert the dasher making sure it is positioned correctly into the can indentation in some cases depending on the Ice Cream Makers just pour the mixture into the bowl
3. Place cover on ice cream bowl.
4. Place filled can in bucket.
5. Turn on the Ice Cream Maker

6. While it's running, add 2 inches of ice on the bottom of the bucket.
7. Sprinkle about 1/4 cup salt over ice.
8. Continue layering ice and salt until the ice level reaches the top of the rotating ice cream can.
9. In about 20 to 40 minutes, the ice cream maker should stop churning.
10. Carefully clean lid, remove, and pack down ice cream in the can.
11. Place ice cream can in freezer for several hours to harden.

Hints and Tips when using a home Ice Cream Maker
HYGIENE - this is a very important factor when making ice cream at home. If using an ice cream maker always follow the manufacturer's instructions for correct cleaning and maintenance of the appliance
UTENSILS - if your ice cream maker has a metal container, be sure to use only wooden or plastic utensils when removing any mixture from it. Otherwise you risk damaging the container.
MILK AND EGGS - when preparing a recipe that involves heating milk and then mixing with eggs be sure to cook on a low to medium heat and to keep stirring all the time. For best results when mixing the milk and eggs together, stir half of the hot milk mixture into the beaten eggs and then pour the eggs into the remaining hot mixture
CHOPPED INGREDIENTS - if your ice cream maker has an opening through which you can add ingredients, make sure that any chopped items in your ice cream recipe (such as chocolate or nuts) are sufficiently finely chopped to go through.
STORING ICE CREAM ....
~ if kept in a sealed, plastic container (always make sure the lid is tightly closed), ice cream can be stored for quite a long time in the freezer.
