Waffle Maker - Basics
A waffle iron is a specialized kitchen appliance it consists of two metal plates that get electrical heat and are molded to create square, round or triangular waffles depending on the plates shape. The waffle mixtrure is prepared and poured in the mold, after a couple of minutes the result is a waffle.

How do Waffle Irons Work
The mold that is used to cook waffles is a heavy, heat-retaining device with a top and bottom compartment. The mold is gridded in a rectangular fashion such that protrusions on the top portion are complemented by depressions in the bottom (and vice versa).

Waffle molds were made out cast Iron, that is why are known as Waffle Irons. Today the principal metals to manufacturate the irons are aluminium and steel.

The closest thing to an old-fashioned non-electric waffle iron is the pizelle maker. Pizzelle are Italian wafer cookies. The old style pizzelle irons required cooking over a heat souce as opposed heating with electric resistance coils irons.

The long handles are used to open the mold and then hold it over a fire. Considerable skill is required to know when to put the dough into the mold and when to take it off the fire.

Window of the Past
Early versions of the waffle iron can be track back to the Middle Ages. Soldiers used to mix a rough batter with water and pour it inside a hot iron griddle box, with handles similar to the ones we used today. They soldiers used to create a toasted cake.

In Holland a cookie dough was pressed between flame heated waffle irons, split, and filled with fresh homemade caramel. The history of the Stroopwafel (Dutch) goes back until 1784.

The waffle iron was electrically invented by Cornelious Swarthout of Troy, NY. And finally patented in 1869, the patented invetions was described as “ device to bake waffles”

The most famous waffle type is the Belgian waffle that was itroduced until 1965. The Belgian waffle was lighter and served with flavored syrups, fruits and whipped cream.

Waffle Irons Development
Modern waffle irons have nowadays the following characteristics:

Some irons are designed to be flipped over immediately after the batter is poured, which has the effect of introducing more air and making the waffles thicker and lighter.

Some can be used as a panini griller, provided the waffle iron has removable waffle plates that can be replaced with flat sandwich grilling plates.

Most irons have a light on top that tells when the iron is hot enough. The light goes out when it is hot enough and goes on when you pour in the waffle mix. It goes out again when the waffle is done

How to choose the best Waffle Iron
Look for:

Belgian or regular waffles Grids reverse for sandwiches or pizelle Size shape and number of waffles Adjustable temperature Power on light indicator Nonstick surface Heat Control to regulates the temperature for even cooking

Hints and Tips
Never wash the grids of a non-stick waffle iron. Instead, wipe them clean after each use with a paper towel. If waffles stick to the iron, it probably needs to be seasoned again with vegetable oil.

To avoid waffle stick to the waffle iron prepare the waffle iron according to the manufacturer's instructions. Make sure that it's clean and free of any baked-on batter or crumbs. Also, waffles made with the cholesterol-free recipe have less fat and may be more likely to stick.

Two main reasons why waffles don’t rise: either the waffle iron wasn't at the right cooking temp or the batter was made with too much Bisquick or not enough liquid. So be sure to measure ingredients carefully. Spoon the Bisquick (don't sift it!) lightly into a dry-ingredient measuring cup, then level it off with the edge of a knife or spatula. To measure the liquid, place a liquid measuring cup on your counter, pour in the liquid, bend down and check the amount at eye level. Double-check the recommended cooking temp in the manufacturer's instructions.

Secrets for Perfect Waffles
Substitute cornstarch for part of the flour. Moist steam causes the average flour-based Waffle to soften as it cools. Add cornstarch to the mix, however, and you increase the Waffle ability to hold moisture. As a cornstarch-enhanced Waffle cools, moisture does not escape as quickly as if it had been made with just flour, and therefore the Waffle stays crisper longer.

Separate the egg(s) and whip the white(s). Waffles made with whipped egg whites are not only lighter and more airy, but also taller and more tender. Plus, they brown better.

Add sugar to the egg white rather than to the other dry ingredients. Beating in sugar softens and stabilizes the egg white, making for a fluffier Waffle. It also makes it much easier to fold the egg whites into the batter and improves the batter's longevity.

Add a generous amount of liquid fat, such as melted butter or vegetable oil to the batter. Liquid fat thins the batter and makes a crisper Waffle than one with solid butter or shortening.

Use a mixture of buttermilk and milk rather than just one or the other. Buttermilk waffles are more flavorful, but the batter is thick and the waffles are less crisp. Waffles made with milk, on the other hand, are more crisp, but less flavorful. A combination offers the best of both: milk for crisp texture, buttermilk for full flavor.

Add a touch of vanilla. Vanilla extract improves the flavor so dramatically that I often eat my waffles without butter or syrup.
